Tropical Smoothie

A thick, sunny blend of frozen mango, pineapple and a little banana with creamy Greek yogurt and a splash of lime. It is refreshing, naturally sweet and packed with protein to keep you full.

Ingredients

For 2 servings
  • 3/4 cup120 gFrozen mango chunks
  • 3/4 cup120 gFrozen pineapple chunks, unsweetened
  • 1/2 small50 gRipe banana
  • scant 1 cup200 gPlain nonfat Greek yogurt
  • 1/2 cup120 gUnsweetened coconut water
  • 1/2 cup120 gCold water
  • 1 tbsp15 gFresh lime juice
  • 1 tbsp12 gChia seeds (optional)

Steps

    Pour the coconut water, lime juice and about three-quarters of the cold water into the blender jar.

    Add the Greek yogurt and the peeled banana, broken into pieces.

  3. 3

    Add the frozen mango and pineapple chunks, plus the chia seeds if using.

    Blend on high for 45–60 seconds until completely smooth, stopping to scrape down the sides if needed.

    If the smoothie is too thick, blend in the remaining cold water.

    Pour into two glasses and serve straight away.

Swaps, storage and make-ahead

Swaps

  • For a dairy-free, vegan version, use unsweetened soy or coconut yogurt labelled vegan in place of the Greek yogurt.
  • Use plain water instead of coconut water if you can't find it or want a simpler shopping list.
  • Swap the banana for an extra 1/4 cup of frozen mango to keep it thick and sweet without banana flavour.
  • Use fresh mango and pineapple with a handful of ice if you don't have frozen fruit.

Storage

This smoothie is best enjoyed right away, as it thins out and separates on standing. If needed, refrigerate leftovers in a covered jar within 2 hours and drink within 24 hours, shaking or re-blending first; don't freeze it in the glass, but you can freeze leftovers in ice-pop moulds.

Make ahead

Portion the frozen mango, pineapple, banana pieces and chia seeds into freezer bags for up to a month, then just add the liquids and yogurt and blend when you're ready.
