Ingredients

For 6 servings
  • 1 medium (about 900 g flesh)Fresh pineapple, peeled and cored
  • 1 tbsp20 gMaple syrup
  • 1 tspGround cinnamon
  • 1 tbsp15 gLime juice
  • 1 pinchSalt
  • 1 tsp5 gCanola oil
  • small handfulFresh mint leaves, torn (optional)

Steps

    Cut the peeled, cored pineapple into 12 rings or spears about 1.5 cm thick.

    Whisk the maple syrup, cinnamon, lime juice and salt in a small bowl.

    Brush the pineapple pieces lightly on both sides with the glaze, keeping a little back.

    Heat a grill, barbecue or grill pan to medium-high and brush the grates with the oil.

    Grill the pineapple for 3 to 5 minutes per side until grill marks form and the edges caramelise.

    Brush with the remaining glaze as soon as it comes off the heat.

    Scatter with torn mint, if using, and serve warm.

Swaps, storage and make-ahead

Swaps

  • Use honey instead of maple syrup if you don't need the dish to be vegan.
  • Swap the lime juice for lemon juice or a splash of orange juice for a slightly different citrus note.
  • Use canned pineapple rings in juice, drained and patted dry, if fresh pineapple is hard to find.
  • Replace the cinnamon with a pinch of ground ginger or chilli flakes for a warmer, spicier finish.

Storage

Grilled pineapple is best eaten warm on the day, but leftovers can be refrigerated in a covered container within 2 hours and eaten within 3 to 4 days, cold or briefly reheated in a pan. Freezing is not recommended, as the pineapple turns soft and watery once thawed.

Make ahead

Peel, core and slice the pineapple up to a day ahead and keep it covered in the fridge, and whisk the glaze in advance too. Grill just before serving for the best caramelised edges.
