Green Smoothie

A bright, creamy blend of baby spinach, frozen banana, mango and a squeeze of lime, naturally sweet with no added sugar. It takes about five minutes and makes a refreshing breakfast or afternoon pick-me-up.

Ingredients

For 2 servings
  • 2 packed cups60 gBaby spinach
  • 1 large130 gBanana, sliced and frozen
  • 1 cup140 gFrozen mango chunks
  • 1 cup240 gUnsweetened almond milk
  • 1/2 cup120 gCold water
  • 1 tbsp7 gGround flaxseed
  • 1 tbsp15 gLime juice
  • 1 small piece (1 cm)5 gFresh ginger, peeled (optional)

Steps

    Pour the almond milk and cold water into the blender jug.

    Add the spinach and blend on high for about 30 seconds until no leafy pieces remain.

    Add the frozen banana, frozen mango, ground flaxseed, lime juice and ginger, if using.

    Blend on high for 45–60 seconds until thick and completely smooth.

    Taste and add a splash more water if you prefer it thinner, then blend briefly again.

    Pour into two glasses and serve straight away.

Swaps, storage and make-ahead

Swaps

  • Use unsweetened oat milk instead of almond milk for a nut-free version, choosing one labelled gluten-free if you need it to stay gluten-free.
  • Swap the frozen mango for frozen pineapple chunks for a tangier flavour.
  • Replace the baby spinach with the same amount of baby kale, stems removed, for a slightly earthier taste.
  • Use chia seeds instead of ground flaxseed, blending a little longer so they break down.

Storage

This smoothie is best enjoyed fresh, as it separates and the colour dulls on standing. If needed, keep leftovers in a sealed jar in the fridge for up to 24 hours and shake or re-blend before drinking.

Make ahead

Pack the spinach, frozen banana, mango, flaxseed and ginger into freezer bags and freeze for up to 3 months, then tip into the blender with the almond milk, water and lime juice when ready.
