Carrot juice

A bright, naturally sweet glass of fresh carrot juice, lifted with juicy orange and a gentle kick of ginger. You only need a blender and a sieve.

Ingredients

For 2 servings
  • 6 medium (about 1.1 lb)500 gCarrots
  • 2 medium260 gOranges
  • 2 cm piece10 gFresh ginger
  • 1 cup240 gCold water
  • 1 tbsp15 gLemon juice (optional)

Steps

    Scrub the carrots well, trim off the ends and cut them into 2-3 cm chunks.

    Peel the oranges, remove any seeds and break them into segments.

    Peel the ginger with the edge of a spoon and slice it thinly.

    Put the carrots, oranges, ginger and cold water into a blender.

    Blend on high for 1-2 minutes until completely smooth.

    Pour the mixture through a nut milk bag or a fine sieve lined with a clean cloth set over a jug.

    Squeeze or press the pulp firmly to extract as much juice as possible.

    Stir in the lemon juice if using, then taste and adjust.

    Pour into two glasses and drink straight away, or chill in a sealed jar and drink within 24 hours.

Swaps, storage and make-ahead

Swaps

  • Swap the oranges for 1 large apple, cored and chopped, for a sweeter, less tangy juice.
  • Use lime juice instead of lemon juice for a slightly sharper, more fragrant finish.
  • Replace the fresh ginger with a small pinch of ground ginger if you don't have fresh on hand, adding a little at a time to taste.
  • Skip straining and blend with a little extra water for a thicker smoothie-style drink that keeps all the pulp.

Storage

Fresh juice is best drunk straight away; otherwise refrigerate it in a sealed jar within 2 hours and drink within 24 hours, shaking before serving. Freezing is not recommended, as the flavour and texture suffer once thawed.

Make ahead

Scrub and chop the carrots, segment the oranges and slice the ginger up to a day ahead, then store them in a sealed container in the fridge ready to blend.
