Mango Sorbet

A bright, silky sorbet made from sweet frozen mango, a squeeze of lime and just a touch of maple syrup. Naturally dairy-free and ready in minutes, no ice cream maker needed.

Ingredients

For 4 servings
  • 4 cups600 gFrozen mango chunks
  • 2 tbsp (about 1 lime)30 gFresh lime juice
  • 1 tbsp20 gMaple syrup
  • 1/4 cup60 gCold water
  • 1 small pinchSalt
  • a few leavesFresh mint leaves, to garnish (optional)

Steps

    Take the frozen mango out of the freezer and let it sit for 5 minutes so it softens slightly.

    Put the mango, 1 tbsp of the lime juice, the maple syrup and the salt into a food processor or high-powered blender, keeping the remaining 1 tbsp lime juice aside.

    Add half of the cold water.

    Blend, stopping to scrape down the sides, until the mixture turns thick and smooth.

    If the blades struggle, add the remaining water a little at a time until it moves freely.

  6. 6

    Taste, then blend in the reserved lime juice, all or part, to make it as sharp as you like.

    Scoop into bowls and serve straight away for a soft-serve texture.

    For a firmer, scoopable sorbet, spread it in a lidded container and freeze for about 1 hour before serving.

    Garnish with mint leaves, if using.

Swaps, storage and make-ahead

Swaps

  • Use honey instead of maple syrup if you don't need the sorbet to be vegan.
  • Leave out the maple syrup entirely when your mango is very ripe and sweet.
  • Swap half the mango for frozen pineapple or peach chunks for a different fruity flavour.
  • Use lemon juice instead of lime juice if that's what you have on hand.

Storage

This sorbet is best eaten fresh; leftovers can be kept in a lidded container in the freezer for up to about 1 week. It will freeze very hard, so let it soften at room temperature for 10 to 15 minutes, or re-blend briefly, before serving.

Make the sorbet up to a day ahead and keep it frozen in a lidded container, then soften it for 10 to 15 minutes or re-blend before scooping. You can also squeeze the lime juice and keep it covered in the fridge for a day.
