Ingredients

For 2 servings
  • 2 tspMatcha green tea powder
  • 1/4 cup60 gHot water (about 80 °C / 175 °F)
  • 1 2/3 cups412 gLow-fat (1%) milk
  • 2 tsp14 gHoney

Steps

    Bring the water to a boil, then let it cool for about 2 minutes until it reaches roughly 80 °C / 175 °F; boiling water makes matcha bitter.

    Sift the matcha powder through a small sieve into a wide bowl to remove lumps.

    Pour the hot water over the matcha.

    Whisk briskly in a zigzag motion with a bamboo whisk or small whisk for about 30 seconds until smooth and frothy.

    Warm the milk in a small pan over medium-low heat for 3-4 minutes until steaming, without letting it boil.

    Stir the honey into the warm milk until dissolved.

    Froth the milk with a milk frother or by whisking vigorously until foamy.

    Divide the whisked matcha between two mugs.

    Pour the frothed milk over the matcha, spooning the foam on top, and serve straight away.

Swaps, storage and make-ahead

Swaps

  • For a dairy-free and vegan version, use unsweetened soy or oat milk and swap the honey for maple syrup.
  • Skip the honey entirely or use a few drops of liquid stevia for a less sweet latte.
  • Use skim milk instead of 1% milk for a lighter drink that still froths well.
  • Choose culinary-grade matcha for an easier-to-find, budget-friendly option, though the flavour will be a little stronger and more bitter.

Storage

This latte is best enjoyed fresh, as the foam collapses and the matcha settles quickly. If you have leftovers, refrigerate within 2 hours and drink within 1 day, stirring well and reheating gently until steaming hot or serving it over ice; do not freeze.

Make ahead

Sift the matcha into a small airtight jar ahead of time so it's ready to whisk. You can also whisk the matcha with water and refrigerate it for up to 1 day, then stir and top with freshly warmed, frothed milk.
