Ingredients

For 4 servings
  • 1/2 cup120 gWater
  • 1 1/2 tspAgar powder
  • 2 cups480 gUnsweetened almond milk
  • 2 tbsp40 gMaple syrup
  • 1/2 tspAlmond extract
  • 2 small mandarins150 gMandarin orange segments, fresh
  • 2/3 cup100 gStrawberries, hulled and halved
  • 1 medium75 gKiwi, peeled and sliced
  • 2 tsp10 gLemon juice
  • 1 tbsp5 gGoji berries, dried (optional)

Steps

  1. 1

Pour the water into a small saucepan and whisk in the agar powder.

  2. 2

Let the agar sit in the water for 5 minutes to hydrate.

  3. 3

Bring to a boil over medium heat, then simmer for 2 minutes, stirring, until the agar is fully dissolved.

  4. 4

Whisk in the almond milk and maple syrup.

  5. 5

Heat for about 3 minutes, stirring, until steaming but not boiling hard.

  6. 6

Take the pan off the heat and stir in the almond extract.

  7. 7

Pour the mixture into a 20 cm (8 in) square dish and skim off any bubbles from the surface.

  8. 8

Cool at room temperature for 15 minutes, then refrigerate for about 2 hours until firmly set.

  9. 9

Toss the mandarin, strawberries and kiwi with the lemon juice.

  10. 10

Cut the jelly into diamonds or cubes and divide among 4 bowls.

  11. 11

Spoon the fruit and any juices over the jelly, scatter with goji berries if using, and serve chilled.

Swaps, storage and make-ahead

Swaps

  • Use unsweetened soy or oat milk instead of almond milk, and choose an oat milk labelled gluten-free if you need it to stay gluten-free. For a nut-free version, also replace the almond extract with a nut-free imitation almond flavouring and check its label, as almond extract is often made from almonds.
  • Swap the maple syrup for the same amount of agave syrup or granulated sugar if that is what you have on hand.
  • Use canned mandarin segments, drained, instead of fresh mandarins for easier shopping.
  • Replace the goji berries with fresh blueberries or pomegranate seeds, or simply leave them out.

Storage

Refrigerate the jelly covered within 2 hours and eat it within 3 to 4 days; keep the cut fruit separate and add it just before serving, since dressed fruit is best eaten the same day. Do not freeze, as agar jelly turns watery and spongy when thawed.

Make ahead

Make the jelly up to 2 days ahead and keep it covered in the fridge, cutting it into diamonds shortly before serving. Prepare and dress the fruit no more than a few hours in advance.
