Ingredients

For 4 servings
  • 500 g (about 4 cups)Edamame in pods (fresh or frozen)
  • 4 cups950 gWater
  • 1 tsp6 gCoarse sea salt

Steps

    Pour the water into a large pot fitted with a steamer basket and bring it to a boil over high heat.

    Rinse the edamame pods under cold running water and drain them.

  3. 3

    Put the pods in the steamer basket, cover, and steam for 5–6 minutes until the beans inside are tender (add 1–2 minutes if using frozen).

    Taste one bean to check it is soft and sweet, not chalky.

    Tip the pods into a bowl.

    Sprinkle the salt over the hot pods and toss to coat.

    Serve warm or at room temperature, squeezing the beans from the pods with your teeth and discarding the shells.

Swaps, storage and make-ahead

Swaps

  • Swap the coarse sea salt for flaky salt such as Maldon for a crunchier finish, or use half the salt with a squeeze of lemon.
  • Toss the hot pods with a pinch of chilli flakes or togarashi and a little garlic powder for a spicy version.
  • Use frozen shelled edamame instead of pods, steaming a minute or two less, if you want beans ready to eat or add to salads.
  • Boil the pods in salted water for the same time if you don't have a steamer basket.

Storage

Refrigerate leftovers in a covered container within 2 hours and eat within 3 to 4 days, either cold or reheated until steaming hot. They are best fresh, and refreezing cooked frozen edamame is not recommended because the texture suffers.

Make ahead

Steam the edamame up to a day ahead, cool quickly and chill, then serve cold or briefly re-steam until hot and salt just before serving.
