Energy Balls

Chewy no-bake bites made from oats, sweet dates, crunchy almonds and a touch of cocoa. They make a handy grab-and-go snack with natural sweetness and lasting energy.

Ingredients

For 8 servings
  • 12 large200 gMedjool dates, pitted
  • 1 cup90 gRolled oats
  • 1/2 cup70 gRaw almonds
  • 2 tbsp32 gNatural peanut butter
  • 1 tbsp12 gChia seeds
  • 2 tbsp10 gUnsweetened cocoa powder
  • 1 tspVanilla extract
  • 1 pinchSalt
  • 1 to 2 tbsp20 gWater
  • 3 tbsp15 gUnsweetened desiccated coconut, for rolling (optional)

Steps

    Put the almonds and oats in a food processor and pulse until coarsely ground.

    Add the pitted dates, peanut butter, chia seeds, cocoa powder, vanilla and salt.

    Blend until the mixture clumps together into a sticky dough.

    If the dough is too dry to hold its shape, add the water a little at a time and pulse again.

    Scoop out level tablespoons of dough and roll into 16 balls with slightly damp hands.

    Roll the balls in the desiccated coconut, if using.

    Place on a tray and chill in the fridge for 15 minutes to firm up.

    Store in an airtight container in the fridge for up to a week.

Swaps, storage and make-ahead

Swaps

  • Use oats labelled certified gluten-free to make the balls gluten-free, since every other ingredient is naturally gluten-free.
  • Swap the peanut butter for sunflower seed butter and the almonds for pumpkin seeds to make them nut-free, though coconut may still be an issue for some allergies.
  • Replace the almonds with cashews or walnuts if that's what you have in the cupboard.
  • Roll the balls in extra cocoa powder or finely chopped nuts instead of coconut if you prefer.

Storage

Keep the balls in an airtight container in the fridge for up to a week. They also freeze well for up to about 3 months; thaw in the fridge or for a few minutes at room temperature before eating.

Make ahead

Roll a full batch at the weekend and keep them chilled, portioned into pairs, for quick snacks through the week. You can also pulse the oats and almonds ahead and store them in a sealed jar until you're ready to blend.
