Apple Crisp

Tender cinnamon-spiced apples baked under a crunchy oat and walnut crumble, with less sugar and butter than the classic. It is warm and comforting, and the fruit flavour comes through.

Ingredients

For 6 servings
  • 6 medium1,000 gApples (such as Honeycrisp or Granny Smith), cored and sliced
  • 1 tbsp15 gLemon juice
  • 1 tbsp20 gMaple syrup
  • 1 1/2 tspGround cinnamon
  • 1 tbsp8 gCornstarch
  • 1 cup80 gRolled oats
  • 1/4 cup30 gWhole wheat flour
  • 1/4 cup30 gWalnuts, chopped
  • 2 tbsp24 gBrown sugar
  • 3 tbsp42 gUnsalted butter, melted
  • 1/8 tspSalt

Steps

    Heat the oven to 190 °C / 375 °F.

    Toss the sliced apples with the lemon juice, maple syrup, 1 tsp of the cinnamon and the cornstarch in a large bowl.

    Spread the apple mixture evenly in a 23 x 23 cm (9 x 9 inch) baking dish.

    In another bowl, mix the oats, flour, walnuts, brown sugar, salt and the remaining 1/2 tsp cinnamon.

    Pour in the melted butter and stir with a fork until the mixture forms moist clumps.

    Scatter the crumble evenly over the apples.

    Bake for 40 to 45 minutes, until the topping is golden and the apple juices bubble at the edges.

    Let it cool for about 10 minutes so the filling can thicken, then serve warm.

Swaps, storage and make-ahead

Swaps

  • For a dairy-free version, use melted coconut oil or a plant-based butter instead of the unsalted butter.
  • For a gluten-free crisp, swap the whole wheat flour for almond flour or a gluten-free flour blend and choose rolled oats labelled gluten-free.
  • For a nut-free topping, replace the walnuts with pumpkin seeds or simply add an extra 1/4 cup of oats.
  • Pears or a mix of apples and frozen berries work in place of some or all of the apples.

Storage

Cool and refrigerate leftovers, covered, within 2 hours and eat within 3 to 4 days. Reheat in the oven until steaming hot to help re-crisp the topping; the microwave works but will soften it.

Make ahead

Mix the crumble topping up to 3 days ahead and keep it covered in the fridge, then slice and toss the apples just before assembling and baking so they don't brown.
