Banana Nice Cream

Frozen ripe bananas blitzed into a thick, creamy soft-serve with a hint of vanilla and cinnamon. It tastes like a treat but is made from fruit, with no added sugar or cream.

Ingredients

For 2 servings
  • 3 medium354 gRipe bananas, peeled
  • 3 tbsp45 gUnsweetened almond milk
  • 1/2 tspVanilla extract
  • 1 pinchGround cinnamon (optional)

Steps

    Peel the bananas and slice them into rounds about 1 cm thick.

    Spread the slices in a single layer on a lined tray or plate so they do not stick together.

    Freeze for at least 4 hours, until completely solid.

    Let the frozen slices sit at room temperature for 2 to 3 minutes to soften slightly.

    Put the banana slices, almond milk, vanilla and cinnamon (if using) into a food processor or high-powered blender.

    Pulse to break up the banana, then blend, scraping down the sides often, until smooth and creamy like soft-serve.

    Serve straight away for a soft texture, or freeze in a covered container for 30 minutes for a firmer scoop.

Swaps, storage and make-ahead

Swaps

  • Use oat milk instead of almond milk for a nut-free version, choosing one labelled gluten-free if you need it to stay gluten-free.
  • Swap 1 of the bananas for a handful of frozen blueberries or mixed berries for a fruity purple swirl like the one in the photo.
  • Blend in 1 tablespoon of unsweetened cocoa powder for an easy chocolate version.
  • Add 1 tablespoon of peanut butter for a richer, nuttier scoop, or sunflower seed butter to keep it peanut-free.

Storage

Nice cream is best eaten fresh, but leftovers can be frozen in a covered container for up to about 1 month. It sets very hard, so let it sit at room temperature for 10 minutes or re-blend before serving.

Make ahead

Slice and freeze the bananas in advance, then store the frozen slices in a sealed freezer bag for up to about 2 months so you can blend a batch whenever you like.
