- 2
Cut the bitter melon in half lengthwise and scoop out the seeds and white pith with a spoon.
- 3
Slice the melon halves into 5 mm half-moons.
- 4
Toss the melon slices with 2 g (about 1/3 tsp) of the salt and leave for 10 minutes.

Pour the beaten eggs over everything and fold gently for about 1 minute until the egg is fully set.
- 14

Swaps, storage and make-ahead
Swaps
- For a vegetarian version, leave out the pork and bonito flakes and add sliced shiitake mushrooms, finishing with toasted sesame seeds or crumbled nori instead.
- To make it gluten-free, use tamari labelled gluten-free instead of soy sauce, and check that your bonito flakes are labelled gluten-free too.
- If you can't find bitter melon, use sliced zucchini or green bell pepper for a milder, non-bitter stir-fry.
- For a more traditional, richer flavour, swap the pork loin for thinly sliced pork belly or diced Spam.
Storage
Refrigerate leftovers in an airtight container within 2 hours and eat within 3 to 4 days, reheating in a pan or microwave until steaming hot. It is best eaten fresh, and freezing is not recommended because the tofu, egg and melon turn watery and spongy.
Make ahead
Up to a day ahead, prepare the bitter melon through the salting, squeezing and drying step and slice the pork, storing both covered in the fridge. Press the tofu just before cooking, then stir-fry everything fresh.
