Chia Pudding

A creamy, spoonable pudding of chia seeds soaked in lightly sweetened vanilla almond milk, topped with juicy fresh berries. Make it the night before for an easy grab-and-go breakfast.

Ingredients

For 2 servings
  • 1/4 cup40 gchia seeds
  • 1 1/4 cups300 gunsweetened almond milk
  • 1 tbsp20 gmaple syrup
  • 1/2 tspvanilla extract
  • 1 pinchsalt
  • 1 cup150 gmixed fresh berries
  • 1 tbsp7 gsliced almonds (optional)

Steps

    Pour the almond milk, maple syrup, vanilla extract and salt into a bowl or jar and whisk to combine.

    Add the chia seeds and whisk well so no clumps form.

    Let the mixture stand for 5 minutes, then whisk again to break up any seeds that have settled.

    Cover and refrigerate for at least 4 hours or overnight, until thick and creamy.

    Stir the pudding and divide it between two bowls or jars.

    Rinse the berries, slice any large ones, and spoon them over the pudding.

    Scatter the sliced almonds on top, if using, and serve cold.

Swaps, storage and make-ahead

Swaps

  • Use unsweetened soy milk instead of almond milk for a nut-free version with more protein, and leave off the sliced almonds or use pumpkin seeds.
  • Swap the maple syrup for a little mashed ripe banana or simply leave it out if your berries are sweet.
  • Use frozen mixed berries instead of fresh, thawing them in the fridge overnight so they are ready at breakfast.
  • Top with toasted unsweetened coconut flakes instead of sliced almonds for a nut-free crunch.

Storage

Keep the pudding covered in the fridge for up to 3 to 4 days, adding the berries and almonds just before serving so they stay fresh and crisp. It is not a good candidate for freezing, as the texture turns watery when thawed.

Make ahead

Mix the chia base in individual jars up to 3 days ahead and keep them sealed in the fridge. Stir before serving, adding a splash of almond milk if it has thickened too much, then add the toppings.
