Açaí na Tigela

A thick, ice-cold purple blend of açaí and banana topped with crunchy granola, fresh fruit and chia seeds. It's a refreshing Brazilian favourite that feels like dessert but makes a bright, energising breakfast.

Ingredients

For 2 servings
  • 2 packets (100 g each)Frozen unsweetened açaí purée
  • 1 medium120 gFrozen banana, sliced
  • 1/2 cup120 gUnsweetened almond milk
  • 1 small100 gFresh banana, sliced, for topping
  • 1/2 cup80 gFresh strawberries, sliced
  • 1/3 cup40 gLow-sugar granola
  • 1 tbsp10 gChia seeds
  • 1 tsp7 gHoney (optional)

Steps

    Run the sealed açaí packets under warm water for a few seconds, then break the frozen purée into chunks.

    Add the açaí chunks, frozen banana and almond milk to a blender.

    Blend on low, stopping to push the mixture down with a tamper or spoon, until thick and smooth like soft-serve.

    Add a splash more almond milk only if the blender stalls, keeping the mixture thick.

    Divide the açaí blend between two chilled bowls.

    Arrange the fresh banana slices and strawberries on top.

    Sprinkle the granola and chia seeds over the fruit.

    Drizzle with honey if using and serve straight away before it melts.

Swaps, storage and make-ahead

Swaps

  • Swap the honey for maple syrup to make the bowl vegan, as long as you choose a granola labelled vegan.
  • Use a granola labelled gluten-free to make the bowl gluten-free.
  • Replace the almond milk with oat milk or coconut milk if you need to avoid tree nuts, and pick a granola labelled nut-free.
  • Top with frozen mixed berries instead of fresh strawberries for an easier, cheaper option out of season.

Storage

This bowl is best eaten straight away, as the blend melts quickly and the granola goes soft. If you have leftover açaí blend without toppings, you can freeze it in a sealed container and re-blend it with a splash of milk, but don't refreeze it once it has fully thawed.

Make ahead

Slice the strawberries up to a day ahead and keep them covered in the fridge, but slice the fresh banana just before serving so it doesn't brown. Pre-portion the frozen banana and açaí chunks in a freezer bag so they're ready to blend in the morning.
