Swaps, storage and make-ahead
Swaps
- Use certified gluten-free bread and a ham labelled gluten-free for a gluten-free version.
- Swap the ham for thin slices of smoked turkey or skip it and add sliced mushrooms for a meat-free plate.
- Use a lighter reduced-fat Gouda, or leave the cheese off entirely.
- Replace the chives with sliced spring onion tops if that's easier to find.
Storage
This dish is best eaten fresh, as fried eggs and toast don't reheat well. If needed, refrigerate any leftover ham, cheese and sliced vegetables within 2 hours and use within 3 to 4 days, and don't freeze the assembled dish.
Make ahead
Slice the tomato and cucumber and chop the chives up to a day ahead, then keep them covered in the fridge. Toast and fry the eggs just before serving.
