Mango Lassi

Ingredients

For 2 servings
  • 1 medium (about 1 1/3 cups flesh)220 gRipe mango, peeled and chopped
  • 1 cup245 gPlain low-fat yogurt
  • 1/2 cup120 gCold water
  • 1/4 tspGround cardamom
  • 4 cubes100 gIce cubes (optional)
  • 1 tspPistachios, finely chopped (optional)

Steps

    Peel the mango, cut the flesh away from the stone and roughly chop it.

    Put the mango, yogurt, cold water and cardamom into a blender.

  3. 3

    Add the ice cubes for a colder, slightly thinner drink.

  4. 4

    Blend on high for about 1 minute until completely smooth and frothy.

  5. 5

    Pour into two glasses and sprinkle with chopped pistachios, if using.

    Serve straight away.

Swaps, storage and make-ahead

Swaps

  • For a dairy-free or vegan version, use a plain unsweetened coconut or soy yogurt labelled vegan and dairy-free.
  • For a thicker, higher-protein drink, replace half the yogurt with plain low-fat Greek yogurt and add a splash more water.
  • If fresh ripe mango is hard to find, use about 1 1/3 cups of thawed frozen mango chunks or unsweetened canned mango pulp.
  • For a nut-free version, skip the pistachios and top with a pinch of extra cardamom instead.

Storage

Mango lassi is best enjoyed fresh, as it can separate and lose its froth on standing. If needed, keep it covered in the fridge for up to 1 day, stir or re-blend before drinking, and do not freeze it as a drink.

Make ahead

Peel and chop the mango up to a day ahead and keep it covered in the fridge, or freeze the chunks to blend later for an extra-cold lassi without ice.
