Swaps, storage and make-ahead
Swaps
- For a vegan version, replace the yogurt with a plain unsweetened soy or coconut yogurt labelled vegan.
- If you can't find fresh fenugreek, use 3 tablespoons of dried fenugreek leaves (kasuri methi) mixed with 1 1/2 cups chopped fresh spinach.
- Use any neutral oil such as canola or peanut oil instead of sunflower oil.
- For a milder thepla that kids may prefer, leave out the green chillies and halve the red chilli powder.
Storage
Cool completely, then wrap in a cloth or foil inside an airtight container and refrigerate within 2 hours for up to 3 to 4 days, reheating on a hot pan until steaming hot. They also freeze well with parchment between each one for up to 1 month; reheat from frozen on a griddle.
Make ahead
You can make the dough up to 1 day ahead and keep it covered in the fridge, letting it come to room temperature before rolling. The fenugreek can also be washed, dried and chopped a day ahead and refrigerated.
