Smoked Salmon Cucumber Bites

Crisp cucumber rounds topped with a lemony light cream cheese, silky smoked salmon and fresh dill. A no-cook, bite-sized snack that looks elegant and is ready in minutes.

Ingredients

For 4 servings
  • 1 large (about 30 cm)350 gEnglish cucumber
  • 1/2 cup115 gLight cream cheese
  • 1 tspLemon zest
  • 1 tsp5 gLemon juice
  • 4 oz115 gSmoked salmon
  • 2 tbsp chopped, plus sprigsFresh dill
  • 1/4 tspBlack pepper
  • 1 tbsp, drained9 gCapers (optional)

Steps

    Wash the cucumber and slice it into rounds about 1 cm thick, making around 24 slices.

    Pat the cucumber rounds dry with paper towel so the topping stays in place.

    Finely chop half of the dill and keep the remaining sprigs for garnish.

  4. 4

    Stir the cream cheese, lemon zest, lemon juice, chopped dill and black pepper together in a small bowl until smooth.

    Spread or pipe about 1 teaspoon of the cream cheese mixture onto each cucumber round.

    Cut the smoked salmon into small strips and fold a piece onto each round.

  7. 7

    Top each bite with a small dill sprig and a caper, if using.

    Serve straight away, or chill for up to 1 hour before serving.

Swaps, storage and make-ahead

Swaps

  • Use a plant-based cream cheese with lemon and dill in place of light cream cheese for a dairy-free version.
  • Swap the smoked salmon for thinly sliced smoked trout or cooked peeled shrimp if salmon is hard to find.
  • Use chopped chives instead of fresh dill if that is what you have on hand.
  • For a sturdier base like the one in the photo, serve the topping on crackers, choosing ones labelled gluten-free if you need to avoid gluten.

Storage

These are best eaten fresh, since the cucumber softens and weeps once topped, so refrigerate any leftovers within 2 hours and eat them within a day. Do not freeze, as the cucumber and cream cheese turn watery.

Make ahead

Mix the lemon-dill cream cheese up to 2 days ahead and keep it covered in the fridge, and slice the cucumber a few hours ahead, stored between paper towels. Assemble no more than 1 hour before serving.
