Rolex (Ugandan Chapati Egg Roll)
Rolex
Uganda's favourite street food: soft whole wheat chapati wrapped around a vegetable-packed omelette with tomato, onion, cabbage and green pepper. This lighter version uses less oil and adds extra egg whites for more protein.

Ingredients
For 4 servings- 1 2/3 cups200 gWhole wheat flour
- 1/2 cup120 gWarm water
- 1 tbsp14 gVegetable oil, for the dough
- 4 tsp18 gVegetable oil, for cooking
- 1/2 tspSalt, for the dough
- 4 large200 gEggs
- 4 large132 gEgg whites
- 2 medium240 gTomatoes, finely chopped
- 1 small70 gOnion, finely chopped
- 1 1/2 cups105 gCabbage, finely shredded
- 1/2 medium60 gGreen bell pepper, finely chopped
- 1/4 tspSalt, for the eggs
- 1/4 tspBlack pepper, ground
- 1 small5 gFresh green chili, finely chopped (optional)
Steps
- 1
In a bowl, mix the whole wheat flour and the dough salt.
- 2
Add the dough oil and the warm water gradually, mixing to form a soft dough.
- 3
Knead for 5 minutes until smooth, cover and rest for 15 minutes.
- 4
While the dough rests, chop the tomatoes, onion, green pepper and chili (if using), and shred the cabbage.
- 5
Whisk the eggs, egg whites, egg salt and black pepper in a bowl.
- 6
Stir the chopped vegetables into the egg mixture.
- 7
Divide the dough into 4 balls and roll each into a thin round about 20 cm across.
- 8
Heat a non-stick pan over medium heat and cook each chapati for about 1 minute per side, brushing with a little of the cooking oil, until golden spots appear. Keep warm under a clean towel.
- 9
Brush the pan with a little more cooking oil and pour in a quarter of the egg mixture, spreading it to the size of a chapati.
- 10
Cook for about 2 minutes until the base is set, then flip and cook 1–2 minutes more until the egg is fully set with no runny parts.
- 11
Place a chapati on top of the omelette in the pan for 30 seconds so they stick together.
- 12
Slide out, egg side up, and roll tightly into a wrap.
- 13
Repeat with the remaining egg mixture and chapatis, then serve warm.
Swaps, storage and make-ahead
Swaps
- Use all-purpose flour or half all-purpose and half whole wheat flour for a softer, more traditional chapati.
- Replace the egg whites with 2 more whole eggs if you prefer not to buy separate whites or a carton.
- Swap the green bell pepper for grated carrot or chopped spinach if that is what you have on hand.
- Leave out the fresh green chili for a milder roll, or add a pinch of chili flakes instead.
Storage
Rolex is best eaten fresh while the chapati is soft and warm. Refrigerate leftovers in an airtight container within 2 hours and eat within 3 to 4 days, reheating in a pan or microwave until steaming hot all the way through.
Make ahead
Make and cook the chapatis up to 2 days ahead, then cool, wrap well and refrigerate, warming them in a dry pan before use. You can also chop the vegetables a day ahead and keep them covered in the fridge, but whisk the eggs and cook the omelettes just before serving.
