Swaps, storage and make-ahead

Swaps

  • For a vegan version, replace the eggs with crumbled firm tofu seasoned with a pinch of turmeric, folding it in at the end and simmering until heated through.
  • Use two 400 g cans of chopped tomatoes instead of fresh tomatoes when good ripe ones are hard to find, and simmer a few minutes longer to cook off the canned taste.
  • Swap the scotch bonnet for half a teaspoon of chilli flakes, or leave it out entirely, for a milder stew.
  • For a lighter dish, use 4 whole eggs plus 4 egg whites in place of the 6 eggs.

Storage

Refrigerate leftovers in a covered container within 2 hours and eat within 3 to 4 days, reheating gently until steaming hot all the way through. The egg turns rubbery after thawing, so it is best not to freeze this stew.

Make ahead

Make the tomato sauce through step 6 up to 3 days ahead and keep it in the fridge, or freeze it for up to 3 months. When ready to eat, bring it back to a simmer and add the beaten eggs fresh.
