Peanut Butter Banana Toast

Crisp whole-grain toast spread with creamy natural peanut butter and topped with sweet banana slices, a pinch of cinnamon and a light drizzle of honey. A filling, energising breakfast that comes together in minutes.

Ingredients

For 2 servings
  • 2 slices64 gWhole-wheat bread
  • 2 tbsp32 gNatural peanut butter (no added sugar)
  • 1 medium118 gBanana
  • 1/4 tspGround cinnamon
  • 1 tsp7 gHoney (optional)
  • 1 tspChia seeds (optional)

Steps

    Toast the bread slices in a toaster or under the grill until golden and crisp, about 2-3 minutes.

    Peel the banana and cut it into rounds about 5 mm thick.

    Spread 1 tablespoon of peanut butter evenly over each warm slice of toast.

    Arrange the banana slices over the peanut butter, overlapping them slightly.

    Dust the banana with the ground cinnamon.

    Drizzle the honey over the top and scatter the chia seeds, if using.

    Serve straight away while the toast is still warm.

Swaps, storage and make-ahead

Swaps

  • Swap the honey for maple syrup to make it vegan, and choose a bread labelled vegan since some loaves contain milk or honey.
  • Use almond butter or cashew butter instead of peanut butter for a different nutty flavour.
  • Use sunflower seed butter and a bread labelled nut-free for a peanut-free version.
  • Add sliced strawberries, raspberries or blueberries alongside the banana, or skip the honey for a less sweet toast.

Storage

This toast is best eaten fresh, as the bread goes soggy and the banana browns once assembled, so it should not be stored or frozen. Keep any leftover banana wrapped in the fridge and use it within a day.

Make ahead

You can pre-measure the cinnamon and chia seeds into a small container the night before, then just toast, spread and slice the banana in the morning.
