Swaps, storage and make-ahead

Swaps

  • For a dairy-free version, use unsweetened soy milk or oat milk instead of the 1% milk.
  • To make it vegan, swap the honey for maple syrup or agave syrup and use a plant milk such as soy milk.
  • For a sweeter, richer drink without extra honey, blend in half a ripe banana with the milk.
  • If you can't find misutgaru, a mix of roasted soybean powder (injeolmi powder) and finely ground toasted oats gives a similar nutty flavour.

Storage

This latte is best drunk fresh, as the grains settle and thicken the longer it sits. Leftovers can be covered and refrigerated for up to 1 day; shake well before drinking, add ice only when serving, and don't freeze it.

Make ahead

Whisk the misutgaru, warm water and honey into a paste and keep it covered in the fridge for up to 1 day, then whisk in cold milk and pour over ice when you're ready to drink.
