Trail Mix

A crunchy, lightly toasted blend of almonds, walnuts, pumpkin and sunflower seeds, tossed with cinnamon and chewy dried fruit. It is a portable, no-added-oil snack that keeps for weeks in a jar.

Ingredients

For 8 servings
  • 1/2 cup70 gRaw almonds
  • 1/2 cup50 gWalnut halves
  • 1/4 cup35 gPumpkin seeds (pepitas)
  • 1/4 cup35 gSunflower seeds, shelled
  • 1/2 tspGround cinnamon
  • 1/4 tspFine salt
  • 1/4 cup40 gRaisins
  • 1/3 cup50 gDried apricots, chopped
  • 1/4 cup15 gUnsweetened coconut flakes (optional)

Steps

    Heat the oven to 160 °C (325 °F) and line a baking tray with baking paper.

    Spread the almonds and walnuts on the tray in a single layer.

    Toast the nuts for 7 minutes.

    Add the pumpkin seeds, sunflower seeds and coconut flakes (if using) to the tray and stir.

    Toast for 4 to 5 minutes more, until fragrant and lightly golden; watch closely so the coconut does not burn.

    Sprinkle the cinnamon and salt over the warm nuts and seeds and toss to coat.

    Leave to cool completely on the tray.

    Stir in the raisins and chopped apricots.

    Store in an airtight jar at room temperature for up to 3 weeks.

Swaps, storage and make-ahead

Swaps

  • Swap the walnuts for pecans or cashews if that is what you have in the cupboard.
  • For a nut-free mix, replace the almonds and walnuts with extra pumpkin and sunflower seeds, and check the seed packets for nut cross-contact warnings if that matters to you.
  • Use dried cranberries or chopped dates instead of the apricots for a different chewy fruit.
  • If you add chocolate, choose dark chocolate chips labelled vegan and dairy-free to keep the mix vegan.

Storage

Once completely cool, keep the mix in an airtight jar at room temperature, away from heat and sunlight, for up to 3 weeks. For longer storage, refrigerate or freeze it so the nuts do not go rancid.

Make ahead

Toast the nuts, seeds and coconut up to 3 weeks ahead, cool them fully and store them airtight. Stir in the dried fruit whenever you like, and portion into small containers for grab-and-go snacks.
