Stuffed Dates

Soft, caramel-sweet Medjool dates filled with creamy almond butter and a crunchy toasted almond, finished with a pinch of flaky salt and cinnamon. A naturally sweet snack that tastes like a treat without any added sugar.

Ingredients

For 6 servings
  • 12 large288 gMedjool dates
  • 3 tbsp48 gNatural almond butter (no added sugar)
  • 12 almonds14 gWhole raw almonds
  • 1/4 tspGround cinnamon (optional)
  • 1 pinchFlaky sea salt (optional)

Steps

    Place the almonds in a dry frying pan over medium heat.

    Toast the almonds for 4-5 minutes, shaking the pan often, until fragrant and lightly golden.

    Tip the almonds onto a plate and let them cool.

    Cut a slit lengthwise down one side of each date, without cutting all the way through.

    Open each date gently and remove the pit.

    Stir the almond butter well so the oil is mixed in.

    Spoon about 3/4 teaspoon of almond butter into each date.

    Press one toasted almond into the almond butter in each date.

    Dust the dates lightly with cinnamon and a few flakes of sea salt, if using.

    Serve straight away, or chill for 15 minutes for a firmer filling.

Swaps, storage and make-ahead

Swaps

  • Use natural peanut butter instead of almond butter for a cheaper, easier-to-find filling.
  • Swap the almond butter for tahini, leave out the whole almonds, and roll the dates in toasted sesame seeds for a nut-free version (note that it contains sesame).
  • Replace the whole almonds with walnut or pecan halves for a different crunch.
  • Roll the filled dates in unsweetened shredded coconut instead of dusting with cinnamon.

Storage

Keep leftovers in an airtight container in the fridge for up to about 5 days. The salt and cinnamon taste best when freshly added, so sprinkle them on just before serving.

Make ahead

Toast the almonds and pit the dates up to 2 days ahead, storing each separately in airtight containers. You can also fill the dates a day ahead and chill them, adding salt and cinnamon just before serving.
