Swaps, storage and make-ahead
Swaps
- For a gluten-free soup, replace the whole wheat pasta with a small pasta labelled gluten-free, or leave the pasta out and add an extra diced potato.
- Use low-sodium vegetable stock instead of some of the water for a deeper-flavoured broth, choosing one labelled vegan if you want to keep the soup vegan.
- Swap the cannellini beans for canned navy beans or chickpeas, drained and rinsed.
- For a classic non-vegan pistou, pound 2 tbsp finely grated Parmesan into the basil paste.
Storage
Cool the soup and refrigerate it within 2 hours in a covered container for up to 3 to 4 days, reheating until steaming hot; the pasta will soften and absorb broth, so add a splash of water when reheating. Keep the pistou separately in a small covered jar in the fridge, with a thin layer of olive oil on top, for up to 2 days, and freeze the soup without the pasta if you want to freeze it.
Make ahead
Make the soup up to a day ahead without the pasta, then reheat until steaming hot and simmer the pasta in it just before serving. The pistou can be made a few hours ahead and kept covered in the fridge, though it is brightest made fresh.
