Vietnamese Avocado Smoothie

A thick, velvety Saigon-style shake of ripe avocado blended with chilled milk and a touch of sweetened condensed milk. It is creamy and gently sweet, with less sugar than the street-stall version.

Ingredients

For 2 servings
  • 1 large170 gRipe avocado, flesh only
  • 1 cup245 gLow-fat milk, cold
  • 2 tbsp40 gSweetened condensed milk
  • 1 cup140 gIce cubes

Steps

    Cut the avocado in half, remove the stone and scoop the flesh into a blender.

    Add the cold milk, the sweetened condensed milk and the ice cubes.

    Blend on high for 45–60 seconds until thick and completely smooth.

    Taste, and blend in a splash more milk if you prefer it thinner.

    Pour into two glasses and serve straight away, before it starts to brown.

Swaps, storage and make-ahead

Swaps

  • For a dairy-free version, use unsweetened soy milk and sweetened condensed coconut milk instead of the low-fat milk and condensed milk.
  • Use frozen avocado chunks in place of the ice cubes for a thicker, colder shake that tastes less diluted.
  • For less added sugar, replace the condensed milk with 1 to 2 teaspoons of honey or a soft pitted date blended in.
  • If you don't have condensed milk, use a little sugar plus a splash of evaporated milk for a similar creamy sweetness.

Storage

This smoothie is best enjoyed right away, because the avocado browns and the texture turns watery as the ice melts. If you must keep some, cover it tightly, refrigerate within 2 hours and drink it within a day, stirring or re-blending first.

Make ahead

Cube ripe avocado, toss it with a squeeze of lime or lemon, and freeze it in a sealed bag for up to about 3 months, then blend it straight from frozen with the milk and condensed milk.
