Greek Yogurt with Honey and Walnuts

Ingredients

For 2 servings
  • 1 1/2 cups340 gPlain low-fat Greek yogurt (2%)
  • 1/4 cup30 gWalnut halves
  • 1 1/2 tbsp32 gHoney
  • 1 pinchGround cinnamon (optional)

Steps

    Place the walnut halves in a dry frying pan over medium-low heat.

    Toast the walnuts for 3 to 4 minutes, shaking the pan often, until fragrant and lightly golden.

    Tip the walnuts onto a board, let them cool for a minute, then roughly chop them.

    Divide the Greek yogurt between two bowls and swirl the tops with the back of a spoon.

    Scatter the chopped walnuts over the yogurt.

    Drizzle the honey evenly over each bowl.

    Dust with a pinch of cinnamon, if using, and serve right away.

Swaps, storage and make-ahead

Swaps

  • For a vegan version, use a thick plant-based yogurt labelled vegan (such as coconut or soy) and swap the honey for maple syrup.
  • For a nut-free bowl, replace the walnuts with toasted pumpkin seeds or sunflower seeds.
  • Use 0% Greek yogurt instead of 2% for a lighter, still creamy base.
  • Swap the walnuts for pecans or almonds if that is what you have on hand.

Storage

This is best assembled and eaten fresh, as the nuts soften and the honey thins into the yogurt. Keep any unused yogurt sealed in the fridge and cooled toasted walnuts in an airtight container at room temperature for up to a week; do not freeze the assembled bowls.

Make ahead

Toast and chop the walnuts up to a week ahead and store them airtight once fully cool. Spoon the yogurt into bowls just before serving and add the walnuts, honey and cinnamon at the last minute.
