Greek Yogurt Parfait with Fruit and Granola

Creamy vanilla-honey Greek yogurt layered with juicy strawberries, blueberries and crunchy granola in a glass. It's a protein-rich breakfast or snack you can put together in minutes.

Ingredients

For 2 servings
  • 1 1/2 cups340 gPlain nonfat Greek yogurt
  • 2 tsp14 gHoney
  • 1/2 tspVanilla extract
  • 1 cup sliced165 gFresh strawberries, hulled and sliced
  • 1/2 cup74 gFresh blueberries
  • 1/2 cup60 gLow-sugar granola
  • 1 tbsp12 gChia seeds (optional)

Steps

    Rinse the strawberries and blueberries and pat them dry.

    Hull the strawberries and slice them.

  3. 3

    In a bowl, stir the honey and vanilla extract into the Greek yogurt until smooth.

    Spoon a quarter of the yogurt into the bottom of each of two glasses or jars.

  5. 5

    Add half of the strawberries and blueberries, split between the two glasses.

    Sprinkle half of the granola over the fruit.

    Repeat with the remaining yogurt, then the remaining fruit.

    Top with the remaining granola and the chia seeds, if using, and serve straight away so the granola stays crunchy.

Swaps, storage and make-ahead

Swaps

  • For a vegan version, use a plain unsweetened coconut or soy yogurt instead of Greek yogurt, maple syrup instead of honey, and a granola labelled vegan.
  • Swap the strawberries and blueberries for raspberries, blackberries or thawed frozen mixed berries if they're cheaper or easier to find.
  • Replace half the granola with chopped unsalted almonds or walnuts for extra crunch with less added sugar.
  • For a gluten-free parfait, choose a granola labelled certified gluten-free; the other ingredients are naturally gluten-free.

Storage

This parfait is best eaten fresh, because the granola softens quickly once layered. If you have leftovers, cover and refrigerate within 2 hours and eat within a day; don't freeze it.

Make ahead

Mix the honey-vanilla yogurt and wash and slice the fruit up to 1 day ahead, keeping them in separate covered containers in the fridge. Assemble and add the granola and chia seeds just before serving.
