Golden Milk

हल्दी दूध (Haldi Doodh)

A soothing mug of warm milk infused with earthy turmeric, fresh ginger and a pinch of black pepper, lightly sweetened with honey. It is cosy, gently spiced and perfect for winding down in the evening.

Ingredients

For 2 servings
  • 2 cups488 gLow-fat milk (1%)
  • 1 tspGround turmeric
  • 1 tbsp6 gFresh ginger, finely grated
  • 1/8 tspBlack pepper, freshly ground
  • 1/4 tspGround cinnamon
  • 1/8 tspGround cardamom (optional)
  • 2 tsp14 gHoney (optional)

Steps

    Pour the milk into a small saucepan.

    Whisk in the turmeric, grated ginger, black pepper, cinnamon and cardamom (if using) until no lumps remain.

    Warm over medium-low heat, stirring often, until small bubbles appear at the edges, about 5 minutes.

    Lower the heat and simmer very gently for 5 minutes, stirring so the milk does not catch or boil over.

    Take the pan off the heat and pour the milk through a fine sieve into two mugs to remove the ginger.

    Stir 1 tsp honey into each mug if you like it sweeter, and serve warm.

Swaps, storage and make-ahead

Swaps

  • Use unsweetened soy milk instead of low-fat milk for a dairy-free version with a similar creamy texture.
  • Swap the honey for maple syrup, and with soy milk the whole drink becomes vegan.
  • Use 1/2 tsp ground ginger in place of fresh grated ginger if you don't have fresh on hand, and skip the straining step.
  • Leave out the honey or use a little less if you prefer a less sweet, more spiced drink.

Storage

Golden milk is best enjoyed fresh and warm, but leftovers can be cooled and refrigerated within 2 hours in a covered jar for up to 2 days. Reheat gently on the stove until steaming hot, stirring well since the spices settle, and don't freeze it.

Make ahead

Mix the dry spices (turmeric, pepper, cinnamon and cardamom) in a small jar ahead of time, and grate the ginger and keep it covered in the fridge for up to a day so you just need to warm the milk.
