Fruit Compote

Apples, pears and berries are stewed gently with a little honey, cinnamon and lemon until soft and glossy. It is lovely warm or chilled, spooned over porridge or eaten on its own.

Ingredients

For 4 servings
  • 2 medium360 gApples, peeled, cored and diced
  • 1 medium180 gPear, peeled, cored and diced
  • 1 1/2 cups220 gMixed berries, fresh or frozen
  • 1/2 cup120 gWater
  • 1 tbsp21 gHoney
  • 1 tbsp15 gLemon juice
  • 1 tspLemon zest (optional)
  • 1 stickCinnamon stick
  • 1/2 tspVanilla extract (optional)

Steps

    Peel, core and dice the apples and the pear into 1.5 cm pieces.

    Put the apples, pear, water, honey, lemon juice, lemon zest and cinnamon stick in a medium saucepan.

    Bring to a simmer over medium heat, then cover and cook gently for 10 minutes, stirring once or twice.

    Add the berries and simmer uncovered for 8–10 minutes, until the fruit is soft and the juices have thickened slightly.

    Take the pan off the heat, remove the cinnamon stick and stir in the vanilla.

    Serve warm, or cool and keep covered in the fridge for up to 5 days.

Swaps, storage and make-ahead

Swaps

  • Use maple syrup instead of honey to make the compote vegan.
  • Swap the cinnamon stick for 1/2 teaspoon ground cinnamon if that is what you have, stirring it in with the fruit.
  • Leave out the honey entirely for a less sweet compote, relying on ripe fruit for sweetness.
  • Replace the mixed berries with frozen cherries or chopped plums for a different flavour.

Storage

Cool the compote and refrigerate it in a covered container within 2 hours, then eat within 5 days. It also freezes well in portions for up to 3 months; thaw in the fridge and serve chilled or reheat until steaming hot.

Make ahead

Make the whole compote a day or two ahead and keep it covered in the fridge, ready to spoon over porridge or yogurt. You can also dice the apples and pear a few hours early and toss them with the lemon juice to stop browning.
