Bissara (Moroccan Fava Bean Soup)

بيصارة (Bissara)

A velvety, warming purée of split fava beans simmered with garlic, then finished with cumin, paprika and a ribbon of golden olive oil. It is a humble Moroccan classic that is rich in plant protein and fibre.

Ingredients

For 4 servings
  • 1 1/2 cups300 gdried split peeled fava beans
  • 4 cloves12 ggarlic
  • 6 cups1,500 gwater
  • 2 tbsp27 gextra virgin olive oil
  • 2 tspground cumin
  • 1 tspsweet paprika
  • 1 tsp6 gsalt
  • 2 tbsp30 glemon juice
  • 1 pinchcayenne pepper (optional)

Steps

    Rinse the split fava beans in a sieve under cold water until the water runs clear.

    Peel the garlic cloves and leave them whole.

  3. 3

    Put the beans, garlic and water in a large pot and bring to a boil over high heat.

    Skim off any foam that rises to the surface.

  5. 5

    Lower the heat, partly cover and simmer for 50–55 minutes, stirring now and then, until the beans fall apart.

    Stir in 1 tbsp of the olive oil, the salt and 1 1/2 tsp of the cumin.

    Blend the soup with a stick blender until completely smooth.

    Thin with a splash of hot water if too thick, or simmer uncovered for a few minutes if too thin.

    Stir in the lemon juice and taste for salt.

    Ladle into bowls and drizzle with the remaining 1 tbsp olive oil.

    Sprinkle with the paprika, the remaining cumin and the cayenne, if using, and serve hot.

Swaps, storage and make-ahead

Swaps

  • Use dried split peas or yellow lentils instead of split fava beans if fava beans are hard to find, simmering until very soft.
  • For a lighter bowl, skip the olive oil stirred into the pot and keep only the finishing drizzle on top.
  • Swap the sweet paprika for smoked paprika for a deeper, smoky flavour.
  • Serve with a gluten-free flatbread labelled that way, or with a crisp side salad, instead of wheat bread.

Storage

Cool and refrigerate within 2 hours in a covered container for 3 to 4 days, then reheat with a splash of water until steaming hot, as it thickens as it sits. It also freezes well for up to about 3 months; thaw in the fridge before reheating.

Make ahead

Make the soup up to 3 days ahead, adding the lemon juice and toppings after reheating. You can also rinse the beans and peel the garlic the day before.
