Swaps, storage and make-ahead

Swaps

  • Use a round 25 cm (10 in) oven-safe or cast-iron skillet instead of the square dish if you prefer wedges; check for doneness a few minutes early.
  • Swap the feta for a lower-sodium crumbly cheese such as farmer's cheese or cottage cheese, and add a pinch more salt to the batter if needed.
  • Replace the sunflower oil with any neutral oil like canola or light olive oil.
  • Use plain still water or milk instead of sparkling water if that's what you have, though the crumb may be a little denser.

Storage

Refrigerate leftovers, wrapped or in an airtight container, within 2 hours and eat within 3 to 4 days; reheat slices in the oven or microwave until steaming hot. It's best fresh and warm, as the edges lose their crispness in the fridge.

Make ahead

Mix the dry ingredients and crumble the cheese up to a day ahead, keeping the cheese chilled, then whisk the wet ingredients and combine just before baking so the baking powder and sparkling water stay lively.
