Ingredients

For 4 servings
  • 1/2 cup100 gPopcorn kernels
  • 2 tsp9 gExtra virgin olive oil
  • 1/2 tspFine salt
  • 1 tspSmoked paprika
  • 1/2 tspGarlic powder (optional)

Steps

    Stir the salt, smoked paprika and garlic powder together in a small bowl.

    Set a large serving bowl under the chute of a hot-air popcorn popper.

  3. 3

    Pour the popcorn kernels into the popper and switch it on.

  4. 4

    Let it run for about 3 to 4 minutes, until the popping slows to a few seconds between pops, then switch it off.

    Remove any unpopped kernels from the bowl.

    Drizzle the olive oil over the warm popcorn while tossing the bowl so it coats lightly.

    Sprinkle over the spice mix and toss again until evenly seasoned.

    Serve straight away while crisp.

Swaps, storage and make-ahead

Swaps

  • Use melted butter instead of olive oil for a classic buttery flavour, though this makes it no longer vegan or dairy-free.
  • Swap the smoked paprika and garlic powder for nutritional yeast and a pinch of black pepper for a cheesy-tasting vegan version.
  • If you don't have an air popper, pop the kernels in a large lidded pot with the 2 tsp of oil over medium heat, shaking often.
  • Try cinnamon with a little sugar instead of the savoury spices for a sweet snack.

Storage

Popcorn is best eaten fresh while crisp. Once fully cooled, leftovers can be kept in an airtight container at room temperature for 1 to 2 days, though they will soften; do not refrigerate or freeze.

Make ahead

Mix the salt, smoked paprika and garlic powder ahead and store in a small sealed jar, then pop and season the corn just before serving.
