Güllaç (Rose Milk Starch Sheet Dessert)
Güllaç
Paper-thin starch sheets soak up warm rose-scented milk and layer into a soft, delicate pudding studded with walnuts and finished with jewel-like pomegranate seeds. This lighter version uses semi-skimmed milk and about half the usual sugar while keeping the classic Ramadan flavour.

- 4 cups (1 litre)1,030 gsemi-skimmed milk
- 1/2 cup + 1 tbsp120 ggranulated sugar
- 2 tbsp30 grose water
- 1/2 cup60 gwalnuts, finely chopped
- 1 cup150 gpomegranate arils
- 2 tbsp15 gpistachios, finely chopped (optional)
Steps
- 1
Pour the milk into a saucepan and add the sugar.
- 2
Warm over medium-low heat for about 8–10 minutes, stirring, until the sugar dissolves and the milk is steaming but not boiling.
- 3
Take the pan off the heat and let the milk cool until just warm to the touch.
- 4
Stir the rose water into the warm milk.
- 5
Ladle a thin layer of the rose milk into a rectangular dish about 20 x 30 cm.
- 6
Lay one güllaç sheet in the dish, folding it to fit if needed, and ladle over enough milk to soak it completely.
- 7
Add a second sheet and soak it with milk in the same way.
- 8
Sprinkle a thin layer of chopped walnuts over the second sheet.
- 9
Repeat the layers, adding walnuts on every second sheet, until all the sheets are used and finishing with a plain soaked sheet on top.
- 10
Pour any remaining milk evenly over the top layer.
- 11
Cover and refrigerate for at least 3 hours, or overnight, until the sheets are soft and set.
- 12
Cut into 8 squares and scatter with pomegranate arils and chopped pistachios, if using, just before serving.
Swaps, storage and make-ahead
Swaps
- Use an unsweetened oat or almond drink instead of semi-skimmed milk for a dairy-free version, choosing one that holds up when warmed.
- Swap the walnuts for extra chopped pistachios or toasted almonds if you prefer a different nut.
- Leave out the walnuts and pistachios and top with extra pomegranate arils for a nut-free dessert, checking that your güllaç sheets are labelled nut-free.
- Replace the rose water with 1 teaspoon of vanilla extract if you can't find it or prefer a milder flavour.
Storage
Keep leftovers covered in the fridge and eat within 2 to 3 days, as the sheets keep softening and the milk is best fresh. Do not freeze, because the sheets turn mushy when thawed.
Make ahead
Assemble the whole dessert up to a day ahead and chill it covered overnight, then add the pomegranate arils and pistachios just before serving.
