Creamy, chunky avocado mashed with zesty lime, crisp onion, fresh cilantro and a kick of chili. It's a bright, fresh dip that tastes best made right before serving.

Ingredients

For 4 servings
  • 3 medium450 gRipe Hass avocados
  • 2 tbsp (about 1 lime)30 gLime juice
  • 1/4 cup40 gWhite onion, finely diced
  • 1/4 cup8 gFresh cilantro, chopped
  • 1 small14 gJalapeño or serrano chili, seeded and minced
  • 1 small60 gRoma tomato, seeded and diced (optional)
  • 1/2 tspSalt

Steps

    Finely dice the onion, chop the cilantro and mince the chili, removing the seeds for a milder dip.

    If using, seed and dice the tomato.

  3. 3

    Halve the avocados, remove the pits and scoop the flesh into a bowl.

    Add the lime juice and salt, then mash with a fork, leaving some chunks.

    Stir in the onion, cilantro, chili and tomato if using.

    Taste and adjust with more lime or salt.

    Serve straight away, or press plastic wrap onto the surface and chill for up to a few hours.

Swaps, storage and make-ahead

Swaps

  • Swap the jalapeño for a pinch of chili flakes or leave it out entirely for a milder, kid-friendly dip.
  • Use red onion or a couple of sliced green onions instead of white onion for a gentler bite.
  • Replace the cilantro with fresh parsley if cilantro tastes soapy to you.
  • Serve with cucumber, bell pepper and jicama sticks instead of tortilla chips for a lighter, crunchy dipper.

Storage

Guacamole is best eaten fresh, but leftovers can be refrigerated within 2 hours with plastic wrap pressed directly onto the surface and eaten within 1 to 2 days; scrape off any browned top layer before serving. It does not freeze well once mixed with onion and tomato.

Make ahead

Dice the onion, chili, tomato and cilantro up to a day ahead and keep them covered in the fridge, then mash the avocados with lime and salt just before serving. You can also make the full dip a few hours early if you press plastic wrap onto the surface and keep it chilled.
