Swaps, storage and make-ahead

Swaps

  • Use a certified gluten-free bread instead of wholegrain bread to make it gluten-free, checking the cottage cheese label too.
  • Swap the cottage cheese for a plant-based ricotta-style spread and choose a bread labelled vegan for a dairy-free, vegan version.
  • Replace the cottage cheese with plain strained Greek yogurt or ricotta if you prefer a smoother texture.
  • Use thinly sliced green onion tops instead of chives if chives are hard to find.

Storage

This toast is best eaten fresh, as the bread goes soggy and it should not be frozen. Keep any unused cottage cheese and sliced vegetables covered in the fridge within 2 hours and use the sliced vegetables within a day or two.

Make ahead

Slice the tomato and cucumber and chop the chives up to a day ahead, storing them in covered containers in the fridge, then toast and assemble just before serving.
