Ayran

A cool, frothy Turkish yogurt drink made from just yogurt, cold water and a pinch of salt. It is tangy and refreshing, and a classic partner to grilled meats and spicy dishes.

Ingredients

For 2 servings
  • 1 1/4 cups300 gplain low-fat yogurt
  • 1 1/4 cups300 gcold water
  • 1/2 tspsalt
  • 4 cubes100 gice cubes (optional)
  • 1/2 tspdried mint (optional)

Steps

    Put the yogurt in a large jug or a blender.

    Whisk or blend the yogurt for a few seconds until smooth.

    Pour in the cold water a little at a time, whisking after each addition.

    Add the salt.

    Whisk hard or blend for about 30 seconds, until the drink is frothy on top.

    Taste and adjust the salt if needed.

    If using ice, put the cubes in two glasses and pour the ayran over them.

    Sprinkle with dried mint if you like, and serve straight away.

Swaps, storage and make-ahead

Swaps

  • For a vegan version, use an unsweetened plain soy or coconut yogurt labelled vegan in place of the dairy yogurt.
  • Use plain whole-milk yogurt instead of low-fat for a richer, creamier drink.
  • Swap the dried mint for a few torn fresh mint leaves blended in.
  • If you have Greek yogurt, use about 1 cup and add a splash more water to get the right thin, drinkable texture.

Storage

Ayran is best drunk fresh while it is cold and frothy; leftovers can be kept covered in the fridge for up to a day, then whisked again before serving. Do not freeze it, as the yogurt will separate.

Make ahead

You can whisk the yogurt, water and salt together and chill it covered for a few hours, then blend or whisk again just before serving to bring back the froth.
